Abstract
De la fruta de Annona muricata L (guanábana) recolectado del Centro Experimental “El Dorado”-INIA se evaluó el contenido de composicional y antioxidante en cáscara y pulpa, utilizando un diseño por conveniencia, se realizó loa siguientes análisis proximales de cascara dando los resultados de 327.26kcal de energía, 0.98% de grasa, 72.78% de carbohidratos, 6.83% de proteínas, 1.79% de ceniza, 17.62% de humedad y 50.0mg de vitamina C; para pulpa deshidratada tenemos de 200.27 kcal de energía, 1.07% de grasa, 64.79% de carbohidratos, 7.87% de proteínas, 10.51% de ceniza y 5.76% de humedad. Para pulpa fresca tenemos 0.15 de acidez titulable, 0.23% de grasa, 14.78% de carbohidratos, 0.92% de proteínas, 0.56% de ceniza, 83.51% de humedad y 19.08mg de vitamina C.
El extracto obtenido por maceración en etanol al 1% de ácido fórmico, por medio del espectrofotómetro UV-Vis se realizaron pruebas de la Actividad Antioxidante (AA), de las cuales se encontraron con mayor presencia en la cáscara en este orden, fenoles totales (55.967 ± 0.061 mg EAG/100 g muestra original), antocianinas (-1.4300mg de cianidina-3-glucosido/100 g de muestra original), flavonoides (0.37 ± 0.00 g quercetina/100g muestra original), taninos (8.810 mg (+)-catequina/100g de muestra original), en la pulpa también se determinó la presencia de fenoles totales (369.398 ± 0.061 mg EAG/100 g muestra original), antocianinas (6.4691 ± 2.4099 mg de cianidina-3-glucosido/100 g de muestra original), flavonoides (0.01 ± 0.00 g quercetina/100g muestra original), taninos (84.925 ± 0,0 mg (+)-catequina/100g de muestra original). La Actividad Antioxidantes de la cáscara y pulpa se debe a la presencia mayoritaria de fenoles y taninos.
