Estudio de prefactibilidad para la instalación de una planta industrial de fruta confitada a partir del fruto de pepino (Cucumis sativus l.) en la región Loreto

Abstract

En el presente trabajo, se realizó el estudio de mercado en la Región Loreto, determinándose una demanda insatisfecha de 3,96 TM/año para el 2015. Se estableció un tamaño de planta de 44,00 TM/año para lo cual se requerirá 80,00 TM/año de frutos de pepino (Cucumis Sativus L.) lo cual equivale a la producción de 15,5 hectáreas de cultivo y se localizó su ubicación en la provincia de Maynas , distrito de san Juan Bautista Km 27 carretera Iquitos – Nauta. Se realizó el balance de materia en cada etapa del proceso productivo determinándose que por cada tanda en el proceso (turno de 8 horas), se deberían introducir 38,41kg/turno de frutos de pepino (Cucumis Sativus L. ) para obtener 22,00 Kg de fruta confitada, obteniéndose un rendimiento de 57 %. De la misma manera se realizaron cálculos de consumo y pérdidas de energía en cada operación unitaria estimándose que para una tanda de producción (un turno) el consumo total de vapor es 0,219 Kg/s. Se realizó cálculos para el diseño y especificación de los equipos principales y auxiliares. Los cálculos se limitaron a la infraestructura establecida y maquinaria predeterminada. Se determinó la inversión total del proyecto que asciende a U.S$ 93 573,56 la cual será financiada por COFIDE (PROPEM - CAF) - BANCO CONTINENTAL hasta un monto que asciende a U.S$ 84 216,20. Se evaluó técnica y económicamente el proyecto obteniéndose los siguientes resultados: VAN U.S$ 14 293,22; TIR U.S$ 15,51% y relación Costo/Beneficio (B/C) de 1,15 así mismo se determinó que el periodo de recuperación de la inversión será de 4,18 años.

Calculations are performed for the design and specification of the main and auxiliary equipment. The calculations were limited to the established infrastructure and machinery default. It was determined the total investment of the project amounts to U. S$ 93 573.56 which will be financed by COFIDE (PROPEM - CAF) - BANCO CONTINENTAL up to an amount that amounts to U. S$ 84 216.20. Assessed technically and economically the project yielded the following results: VAN U. S$ 14 293.22; TIR U. S$ 15.51 % and cost/benefit ratio (B/C) of 1.15 was also determined that the recovery period of investment will be 4.18 years.
