| dc.description.abstract | The objective of this study was the characterization and processing of cashew nut (Anacardium occidentale) in brine solution to obtain a snack-type product, evaluating its physicochemical, microbiological, sensory, and statistical properties. The raw material was first characterized, obtaining average values of 6.20% moisture, 39.25% fat, 18.05% protein, 33.36% carbohydrates, and 3.04% ash, with an energy value of 559.79 kcal/100 g, confirming the high nutritional value of the cashew nut. Additionally, a pH of 6.55, titratable acidity of 0.32% (oleic acid), and 3.95 mg/100 g of vitamin C were recorded. Subsequently, the technological process flow was established, including the stages of reception, selection, washing, immersion in brine with concentrations of 2.5%, 5%, and 9% NaCl, draining, drying in a forced-air oven at 80 °C for 25 minutes, cooling, packaging in laminated aluminum–polymer bags of 10 g, and storage under conditions of 25 °C and 65% relative humidity. The physicochemical analyses of the final product showed a moisture content between 3 and 4%, adequate to guarantee the stability and crispness of the snack. Microbiological analysis indicated the absence of pathogenic microorganisms and values within the limits permitted by sanitary standards for ready-to-eat foods. The sensory evaluation conducted with 25 panelists showed higher acceptance for treatment T1 (8.80), followed by T2 (7.40) and T3 (6.30). Statistical analysis using ANOVA and Tukey’s test (p < 0.05) confirmed significant differences among treatments, highlighting T1 as the treatment with the highest sensory acceptance. | en_US |
| dc.description.abstract | El estudio tuvo como objetivo la caracterización y procesamiento de la nuez de marañón (Anacardium occidentale) en solución de salmuera para la obtención de un producto tipo snack, evaluando sus propiedades fisicoquímicas, microbiológicas, sensoriales y estadísticas. Se realizó la caracterización de la materia prima, obteniéndose valores promedio de 6,20 % humedad, 39,25 % grasa, 18,05 % proteínas, 33,36 %, carbohidratos y 3,04 % cenizas, energía: 559,79 kcal/100 g, lo que confirma el alto valor nutricional de la nuez de marañón, un pH de 6,55, acidez titulable: 0,32 % (ácido oleico) y 3,95 mg/100 g de vitamina C. Posteriormente se estableció el flujo tecnológico, con las etapas de recepción, selección, lavado, inmersión en salmuera con concentraciones de 2.5 %, 5 % y 9 % de NaCl, escurrido, secado en horno de aire forzado a 80 °C durante 25 minutos, enfriamiento, envasado en bolsas laminadas de aluminio-polímero de 10 g y almacenamiento bajo condiciones de 25 °C y 65 % de humedad relativa. Los análisis fisicoquímicos del producto final mostraron una humedad entre 3 y 4 %, adecuada para garantizar la estabilidad y crocancia del snack. El análisis microbiológico, indicaron ausencia de microorganismos patógenos y valores dentro de los límites permitidos por las normas sanitarias. La evaluación sensorial con 25 panelistas mostró mayor aceptación para el tratamiento T1 (8,80), seguido de T2 (7,40) y T3 (6,30). El análisis estadístico mediante ANOVA y prueba de Tukey (p < 0,05) confirmó diferencias significativas entre tratamientos, destacando T1 como el de mayor aceptación sensorial. | es_PE |
