Abstract
Analizamos y comparamos el aporte calorico y nutricional de las dietas hipoglucidas e hipograsas brindadas en el Hospital Regional de Loreto “Felipe Santiago Arriola Iglesias” con los lineamientos estipulados en su manual de dietas hospitalarias 2025. El presente trabajo de investigación fue de enfoque cuantitativo de tipo no experimental, diseño descriptivo simple, las muestras fueron tomadas de los menús elaborados en el área de nutrición de dicho hospital por 16 días mediante el pesado directo de alimentos para la determinación del valor energético y de macronutrientes de dichas dietas. Se obtuvieron déficits energéticos y de macronutrientes en ambas dietas: La dieta hipoglucida con un promedio de 837.75 Kcal/día y la hipograsa con 819.88 Kcal/día, ambas debajo de las 1500-1800 Kcal/día respectivas estipuladas en el manual de dietas; además, lípidos y carbohidratos mostraron reducciones marcadas y aporte proteico variado en ambas dietas.
We analyzed and compared the caloric and nutritional content of the low-carbohydrate and low-fat diets provided at the “Felipe Santiago Arriola Iglesias” Regional Hospital in Loreto with the guidelines set forth in its 2025 hospital diet manual. This research study employed a quantitative, non-experimental approach with a simple descriptive design. Samples were taken from the menus prepared by the hospital’s nutrition department over a 16-day period through direct weighing of foods to determine the energy and macronutrient content of these diets. Energy and macronutrient deficits were found in both diets: The low-carbohydrate diet averaged 837.75 kcal/day and the low-fat diet averaged 819.88 kcal/day, both below the respective 1,500–1,800 kcal/day ranges stipulated in the diet manual; furthermore, lipids and carbohydrates showed marked reductions, and protein intake varied in both diets.
